Sit yourself down there. Can you see OK? Great, now I can start... I'm having
a pie-cooking marathon this evening!
Would you believe that, a few years ago, I was even offered a job cooking in a
bistro, entirely due to my apple pie-cooking skills? But tonight I'm making two
pumpkin pies and two using turkey and vegetables.
To begin with I used to cook stuff with my mum and our next-door neighbour. I
was probably only six or seven years old at the time. When I took my creations
(usually jam tarts) home to mum, the next-door neighbour would be standing behind
me, shaking her head as a warning not to eat, because the pastry had been dropped
on the floor numerous times.
I went to progressive first and secondary schools which thought that boys should
learn to cook. That was pretty forward-thinking for the mid-1970's. Some of the
things we were taught were of limited use. When I left home for the first time
I could make a Christmas Cake, but I didn't know how on earth to cook minced (ground)
beef!
However, among the many useful things that Mrs Smith our Home Economics teacher
did show us was how to make great pastry.
She had a larger-than-life personality and teaching style that all of the kids
used to impersonate. Of course, looking back, it was intentional on her part.
It was her unique way of getting the message through most effectively.
We never forgot what she said, because we all wanted to impersonate her later
in the playground. And even now, twenty-five years later, I still remember!

Of course I refuse to listen to any of it ;-)))
Wow, that little tale was as juicy as my pumpkin pie :-)
The cream sauce that I've made for the turkey pie is especially delicious this
time.
I make my pumpkin pies with an upper crust too. But apparently the traditional
American-style pumpkin pie is open...
